Tortellini with pistachios and green beans

Ingredients (per 8 servings):

  • 500 g of Tortellini Pagani cured ham
  • 250 g of shelled pistachios
  • 150 g of boiled green beans
  • 1 celery stick
  • 2 sprigs of parsley
  • 1 small clove of garlic
  • 70 g of parmesan


Tip the cleaned pistachios in salted boiling water for a minute. Let them dry in the oven at 150° for 10 minutes, then blend them. Chop the parsley and put it in a bowl together with the minced garlic, pistachios and parmesan. Pour in the oil until a thick cream is obtained. Cut the green beans, already boiled, into small pieces, and add them to the cream. Meanwhile, cook the Tortellini and, once the desired cooking is obtained, drain and season them with the prepared sauce. If necessary add a little cooking water to the Tortellini, just enough to mix everything.

Consigli per la cottura:

Pour the Tortellini/Ravioli into slightly salted water (2.5 liters of water and 25 g of salt per 250 g of product) just before it starts boiling. Cook for about 14 minutes. Drain slowly and add the dressing, preferably by sautéing it in a pan for a couple of minutes, until you reach the desired consistency.
